Ingredients:
For the Peanut-Coconut Sauce:
- 125mL can of Ayam Gado Gado peanut sauce (ensure it’s vegan)
- ¼ cup coconut cream
- 1 tablespoon soy sauce or tamari (for a gluten-free option)
- ½ tablespoon tamarind paste (or substitute with lime juice)
- ½ teaspoon garam masala
- ½ teaspoon ground turmeric
- ¼ teaspoon ground cumin
- Salt and pepper, to taste
For the Curry:
- 1 tablespoon vegetable oil
- ½ onion, thinly sliced
- 1 clove garlic, minced
- ½ teaspoon grated fresh ginger
- 1 cup diced potatoes (peeled or unpeeled, as preferred)
- ½ can (7 oz) coconut milk
- Mixed vegetables (such as carrots, green beans, and cabbage)
- 150g firm tofu, cubed (or other plant-based protein of choice)
- Cooked rice, for serving
Instructions:
- Prepare the Peanut-Coconut Sauce:
- In a bowl, whisk together the Ayam Gado Gado peanut sauce (make sure it’s vegan), coconut cream, soy sauce, tamarind paste, garam masala, turmeric, cumin, salt, and pepper. Adjust the seasonings to your taste.
- Cook the Curry:
- In a medium-sized pan or pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until softened and translucent.
- Add Aromatics and Potatoes:
- Add the minced garlic and grated ginger to the pan. Sauté for about 1 minute until fragrant. Stir in the diced potatoes and coat them with the aromatics.
- Add Coconut Milk:
- Pour in the half can of coconut milk and bring the mixture to a gentle simmer. Cook the potatoes until they are tender, about 15-20 minutes, stirring occasionally.
- Incorporate Peanut-Coconut Sauce:
