- 4 Medium Russet Potatoes
- ½ Onion (Diced)
- 2 Tbsp Nuttlex
- Sheese
- Spring Onions
- Salt
- Vegan Mayo
Wash dirty potatoes, then stab them, then microwave them for ten minutes, then bake them until skin crispy, then cut them in half, scoop 3/4 of each guts out, mash the guts with diced onion, lotsa buttery nuttelex and salt, add guts back to each shell, sprinkle with Sheese mozzarella or Sheese tasty shreds, bake again until top golden. I like to dip them in aioli or mayo with spring onions mixed through.
